Mount Pleasant Cake
This recipe comes from Mrs M Barnes. She lived in Barnoldswick. That's a cool place name.
6 oz. caster sugar
4 oz. butter or margarine
2 oz. self raising flour
2 oz. ground rice
1 oz. corn flour
1 oz. ground almonds
2 eggs
1. Cream butter and sugar, add eggs, then mix in remaining ingredients. 2. Turn into square tin about 7x7x3 inches and lightly sprinkle top with caster sugar. 3. Bake at mark 4 (350'F.) until firm to touch. When cold cut into squares.
