Southern Fish Bake
This yummy dish comes from "Mrs. R. Evans, Llandrillo, Corwen, Merioneth" and should serve 4 people. Or maybe only 2 people if they are overweight.
4 cod fillets
2 oz. butter
1 teaspoon chopped parsley
1 small chopped onion
1 grapefruit
2 oz. mushrooms (sliced)
1) Mix 2/3 parsley and onion with butter and grated rind of grapefruit. Place fish in shallow casserole, spread mixture over, then sprinkle with remaining parsley and onion and seasoning.
2) Add mushrooms and juice of half the grapefruit.
3) Place segments of remaining half grapefruit on top and cover.
4) Bake at mark 5 (375'F.) for 30 minutes
